Pingtung County’s Zhutian Township has
strong sunshine and good water quality. Because of these advantages, this small
Hakka community in southern Taiwan once had dozens of soy sauce factories, but
now there are fewer than 10 left.
When he was young, Li An-tian (李安田), known as Uncle
Soy Bean Sauce, was one of the few brewing technicians who had received
training in the early days. He entered the largest soy sauce factory in the
area to learn about brewing techniques as well as how to run a business. But
the soy sauce that was brewed at that time tasted too salty. Li An-tian wanted
to brew soy sauce in a way that retained the original flavor of soy. So in 1972
he established the "Original Sauce Garden", insisting on following
the ancient process of brewing natural pure soy sauce. As a result, he has managed
to brew soy sauce that truly belongs to the Taiwanese people under the strong
sun of Pingtung’s Zhutian Township. For more than 40 years, he has used the
wisdom of the Hakka ancestors in pickling and fermenting, the unique natural
brewing resources bestowed by God - the bright sun in southern Taiwan - and the
water flowing down from Dawu Mountain, to cultivate soy sauce in the small town
of Zhutian, allowing the ancient flavors to continue to be passed on.
Feeling up in age and seeing the
market consumption trend changing rapidly, Li successfully handed over his
hand-brewed soy sauce business to the second generation of his family. With the
concerted efforts of the younger generation, it was determined that the name
local people called Mr. Li - "Uncle Soy Bean Sauce" or “Doyoubo” in
Mandarin Chinese – would be used as their product’s brand name. They
established Doyoubo Industry CO., LTD., and successively introduced the pure
brewing process into soy sauce making, and used modern exquisite equipment in the
production standardization to ensure that every bottle of soy sauce meets
high-quality specifications. In addition to combining ancient brewing methods
and natural ingredients, Doyoubo also sends its products for inspection on a
regular basis to ensure food safety. It also promotes the exquisiteness of this
local product to the world, and has reaped the rewards of its persistence and
insistence on quality.
With a strong sense of gratitude and love for this land, Doyoubo collaborates with Taiwanese farmers to select the right beans, land, and season, and uses natural agricultural methods to grow non-toxic, pesticide-free, 100% non-genetically modified soybeans, black beans, and organic wheat to use as the main raw material for brewing. And with a strong sense of responsibility and affection for its hometown, the company insists on brewing the nostalgic taste of soy sauce in Zhutian, Pingtung.
